Cooking to Fight Breast Cancer

Starting in October 2020, IWA Modena started hosting a “Cooking to Fight Cancer” online charity events series with 4 unique online cooking classes. All proceeds are going to Il Cesto di Ciliege’s big fundraising project 2021: the purchase of a much needed, highly advanced prognostic device for the Policlinico of Modena! This machine, known as Contrast Enhanced Spectral Mammography (CESM), is useful when diagnosing breast cancer and planning related surgical procedures.

Some people either found out late about these fun cooking classes or simply didn’t have time on the day of lesson. So, upon request we have now made all these lessons available for purchase for a one-time donation of only 15 Euros. Once you register, you will receive a document with your handy shopping list and some instructions to get ready for the course. You will also receive a link to the video on YouTube where you can learn how to make the chef’s creation and surprise yourself or your family and friends with your new skills. And of course, you’ll be helping your community as all proceeds continue to go to Cesto Di Ciliege.

Don’t wait too long to commit as Giving Tuesday is our official closing date for fundraising for Cesto di Ciliege this year. So, don’t miss your change to purchase one, two, three, or all four of these amazing cooking classes hosted by word class chefs. As you might know, Giving Tuesday refers to the Tuesday after U.S. Thanksgiving in the United States. It has become a global movement that unleashes the power of people and organizations to transform their communities and the world. On social media you can find many posts with the hashtag #GivingTuesday. In 2020, Giving Tuesday is on December 1. Please register at the bottom of this page if you want to take advantage of this offer. Please fill out the form below once for each course you are interested in purchasing. Select “1” for number of tickets and then indicate which course you are purchasing in the second step. You can repeat the process as many times as you want to buy as many courses as you want.

 

Courses of the Cooking to Fight Cancer Series:

Mexican Cooking Class by Chef Sofia Morales

(The lesson took place mainly in English, but important cooking instructions were provided in Italian as well.)

Sofia is a Mexican chef with more than 10 years of experience working in top-ranked restaurants all around the world. Not only has she obtained a Masters in Gastronomy from the University of Gastronomic Sciences in Pollenzo, but she also participated in the Netflix culinary documentary, “Chef’s Table” in 2015Her exciting journey started as a Chef Patisserie with Restaurante Martin Berasategui (3-Star Michelin restaurant) in Spain, and continued in New York City, first at Alex Stupak’s Empellon Cocina and later as Chef de Partie at Del Posto (1-Star Michelin) hailed as “the grandest and most expensive restaurant in New York” by the New York Times. During her time in Mexico City, Sofia was the head cook at Enrique Olvera’s Pujol, which consistently ranked in the Top 15 in the World’s 50 Best Restaurants list. Here in Italy, Sofia has been working as head chef at one of IWA Modena’s favorite restaurants, Il Filatoio, and has recently moved to Torino to take on a new restaurant, Gastonomia(A)tipica. For Sofia, cooking is a passion and she virtually welcomes you into her own personal kitchen where she will teach you how to make a Mexican dish…or two!

This online cooking class teaches you the Mexican basics you need to know! You’ll learn how to make masa (corn dough) from scratch and all the tasty dishes you can create with it: from a quesadilla to a taco or even chilaquiles! To complete your plates, Sofia also makes with you two of our favorite classic Mexican dips: authentic fresh guacamole and salsa roja!

Italian Cooking Class by Chef Luca Marchini

(The lesson took place mainly in Italian.)

Luca Marchini is the Tuscan-Emilian chef behind the Michelin-starred restaurant, L’Erba del Re, located in Modena. He works through a continuous culinary evolution while also carrying on local gastronomic traditions, which is why he is distinguished for maintaining a delicate balancing act. His dishes are known for their balance between textures and flavors, with a combination rooted in respect and a “deep love for ingredients”. His culinary language is straightforward and his recipes explore the influence of simplicity while implementing his technique to develop original creations.

L’Erba del Re is the place to be for giving your senses and palate the experience of a lifetime, all while dining in a comfortably intimate space that feels like your very own living room. An unobtrusive, yet attentive, dining service paints the scene for the kitchen and distinctive wine cellar’s delicious gastronomic stories.

 

Chef Luca Marchini created a unique pasta dish especially created for this occasion! The dish you will learn how to make is: Spaghetti with artichoke broth, yogurt and spicy pumpkin chutney. Take a look at the plated dish and you know you’re in for a delicious feast.

 

 

Professional Home Cooking Class by Chef Jess Rosval

(The lesson took place in English and Italian.)

Jessica is a Canadian chef working in the restaurant industry since 2001. For the last five years she’s distinguished herself as a chef at Massimo Bottura’s Osteria Francescana as Chef de Parti and head of international events, and most recently as the Head Chef of Casa Maria Luigia. Jessica is also the co-founder and the culinary Director of the Association for the Integration of Women in Modena.

In this class, Jess goes over the basics of professional cooking, to give you the knowledge and confidence to cook creatively and with ease in the kitchen. Some things covered are knife skills, whole fish cleaning, ideas for using all ingredients to reduce food waste and smart use of tools to cut down on the dreaded cleaning time!

 

 

The menu consists of:

  • Sea bass “en papillotte”
  • Spiced squash and seeds
  • Quick flatbreads
  • Yogurt sauce

 

Israeli Cooking Class by Chef David Shushan

(The lesson took place in English and Italian.)

Born and raised in Jaffa, Israel to a family of Moroccan origins. In Tel Aviv David worked in many of the top and unique restaurants and took part of the on growing new Israeli cuisine. Since 2013 he lives in Italy where he worked with Chefs as Vittorio Fusari in Fraciacorta and collaborated with the local SlowFood branch in different restaurants and projects using the local materials in his own dishes.

 

 

During this online cooking class, Chef Shushan prepares the following dishes:

  • Grilled white fish meatballs
  • Lemon scented herbs (or spinach) with toasted almonds
  • Tabùle salad
  • Tahini and yogurt sauce
